Summary

Viet and Alexis Pham, owners of Salt Lake-based Pretty Bird Hot Chicken, serve up Nashville-style hot chicken daily. Born in a refugee camp, Chef Viet Pham and his family immigrated to the United States when he was seven months old. He began his career in finance but found it far from fulfilling, so he began to cook. Realizing he loved making people happy by serving good food with down-home hospitality, he left the world of finance to open a fine dining restaurant in Salt Lake City.

Listen to Viet and Alexis Pham, owners of Pretty Bird Chicken restaurant, and Pete Codella, Go Utah’s communications director, as they discuss operating their restaurants in the Salt Lake Valley. Viet shares his early days’ experience, driving his Prius around Salt Lake City with a turkey fryer in his trunk. They talk about pandemic safety precautions, Viet’s cooking show television appearances, how they tackle the dreaded “What’s for dinner?” question, and much more.
